Menu Plan Monday - 12/27/2010


Here's my last menu for 2010 ... wow, what a year ... LOTS of cooking happened this year. I've decided to get back into my recipe box and am making up a bunch of our family favorites since I'M OFF WORK THIS WEEK! Woo-hoo. Actually, not TOO woo-hoo since this week is an unpaid furlough week due to the budget situation with Oregon schools, but I'm thankful to have a job and thankful to have some much needed down time, too.

Mama's Sweet and Sour Pork

2# pork (pork butt or loin chops), cut into 1" cubes
2 Tablespoons lemon juice
2 Tablespoons soy sauce
1 Tablespoon minced garlic
4 carrots
1/2 leek
2 stalks celery
1 green pepper
1 yellow onion
2 20-oz cans pineapple chunks
1/4 cup vinegar
1/4 cup brown sugar
3 Tablespoons soy sauce
2 Tablespoons cornstarch
2 Tablespoons ginger powder
2 Tablespoons garlic powder
vegetable oil

Marinade 2# pork cubes in 2 Tablespoons lemon juice, 2 Tablespoons soy sauce and 1 Tablespoon minced garlic. While it's marinating, chop four carrots, one-half a leek, two stalks celery, and one green pepper into uniform-sized pieces. Also dice one onion.

Brown pork in a small amount of oil until golden brown and remove from wok/skillet. Saute onion in two tablespoons oil until tender, then add other veggies. While the veggies are cooking, prepare sauce in a gravy shaker: juice from two cans of pineapple chunks, 1/4 cup vinegar, 1/4 cup brown sugar, 3 Tablespoons soy sauce, 2 Tablespoons cornstarch, 2 Tablespoons ginger powder, and 1 Tablespoons garlic powder. Add enough water to the sauce to make 2 cups; shake until smooth.

Add the sauce to vegetables, along with the drained cans of pineapple chunks and the cooked pork. Simmer until sauce thickens and veggies are desired tenderness. Serve over rice.


Mediterranean Upside Down

1 lb. ground beef
1 onion, diced
1.5 Tablespoons cinnamon
1 teaspoon cardamon
1 Teaspoon black pepper
1/4 cup pinenuts
1 1/2 cup rice
2 15-oz cans garbanzo beans

Preheat oven to 350. In a 6-qt dutch oven, brown on the stovetop the ground beef with onion and spices. Drain. Stir in pinenuts; sprinkle with rice and add 3 cups water. Drain two cans garbanzo beans, rinse and add to top of rice (do not stir). Cover and bake for 30 minutes. To serve, empty upside down on serving platter, and serve with tzatziki and pita bread.


Connie's Tarragon Chicken and Special Rice

4 chicken breasts, boneless and skinless
half-pint sour cream (lowfat okay)
2 Tablespoons snipped chives
1/2 teaspoon tarragon
2 Tablespoons white tarragon vinegar
2 teaspoons sugar
2 Tablespoons melted butter
salt, flour, paprika

Preheat oven to 400. Combine sour cream with chives, tarragon, vinegar, and sugar in a medium bowl. Melt butter in the 4-qt baking dish. Place 1/2 cup flour and 1 tablespoon salt in pie plate or zipper bag and dredge chicken breasts in flour. Dip chicken in sour cream mixture then place in baking dish. Pour on any remaining sour cream sauce, then sprinkle with paprika. Bake at 400 for 45 minutes. (I always make extra sauce to pass at table.)

Connie's Special Rice
1 1/2 cup water
2 teaspoons butter
3/4 cup white rice
1 Boullion cube
1/2 cup chopped onion
1/4 lb fresh sliced mushrooms
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground thyme

Dissolve cube in water. Saute rice in butter, add broth to rice. Add onion, mushrooms, and spices. Pour into 2-qt casserole dish, cover and bake with chicken.

Jambalaya Dinner

We picked up some fresh crab at the Farmers Market and I made this tasty recipe tonight. VERY GOOD!!

Crab & Kielbasa Jambalaya
Adapted from the 2009 Food & Wine Cookbook


1/4 c. olive oil
16 oz. kielbasa, quartered lengthwise and cut into 3/4-in chunks
1 onion, chopped
1 red bell pepper, chopped
1 rib celery, chopped
2 large garlic cloves, finely chopped
1 t. Old Bay seasoning
1 1/4 c. long-grain white rice
1 1/2 c. low-sodium chicken stock
1 1/2 c. water
Heaping 1/8 teaspoon dried thyme
Salt and pepper to taste
8 oz. lump crab meat
3 scallions, chopped

Heat olive oil in a medium-sized Dutch oven. Lightly brown kielbasa over high heat, stirring occasionally, about 3 minutes. Remove kielbasa with a slotted spoon and set aside.

Add onion, red bell pepper, celery, and garlic. Cover and cook until soft, stirring occasionally, about 3 minutes.

Add Old Bay, rice, and kielbasa and cook, stirring occasionally, until rice is opaque, about 2 minutes. Add chicken stock, water, and thyme. Season to taste with salt and pepper. Stir once to combine. Bring everything to a boil, then reduce heat to low. Cover and simmer until rice is tender and the liquid is absorbed, about 15 minutes.

Fluff rice and fold in crab and scallions. Let stand for a few minutes until the crab heats through.

Pass some Tabasco sauce at the table.

Menu Plan Monday - Week 9

Well my blog has turned into a bunch of random posts and menu planning! I will get back to crafting and writing about it some day soon. Life's just gotten busy for a time ...

We're right in the middle of Girl Scout cookie sales (anyone need Tagalongs?) and I volunteered to be the cookie mom for T's new troop. It's a lot of work and much harder when you don't have a relationship with the other moms. I've been challenged by people who don't answer emails and don't keep the deadlines to order, pick up, don't show up at sales. I'm SO not looking forward to collecting all the money by the March 15 deadline. This has NOT been a fun job, and one I don't plan on repeating. Our last booth sale is March 14 - hopefully my current cookie orders will arrive by then!

Then, at Christmas, I volunteered to help out at our Women's Retreat. Several years ago when my husband was out of work, I went to retreat on a scholarship and really wanted to give back to my church. I had no idea that retreat would fall right in the middle of cookie sales (or suppressed the truth to protect myself). The job I was assigned is Refreshment Coordinator. Sounds easy enough, since several meals are provided by the conference center and I just do "snacks" - that sounds light and easy.  And, I think it would be if I didn't work full time AND have cookies dancing in my head every night ... so now I have "snacks" and cookies dancing in my head every night. High calorie dreams, to say the least. I wouldn't be surprised if I gain a bunch of weight by the end of this weekend's retreat!  Truly, I'm being covered in prayer and feel much calmer than I probably should since I have to leave Friday AM and have LOTS left to do.  It will work out the way it's supposed to, and MANY ladies will be blessed through our great speaker and worship leader.  Who cares if we didn't have kettle corn, were short soda pop and the table decorations aren't perfect?

Of course, a lot ofl my tension could be related to it being my TOM and starting back on SparkPeople with a Spring Biggest Loser Challenge. I lost about 20 pounds last year with SparkPeople and gained back about half. So, once again I'm exercising and make better food choices. I wouldn't say I'm dieting yet - several slices of sourdough bread for lunch aren't exactly diet-worthy but it was yummy. And yes, I am a big time stress eater.

Monday - Asian Steaks** with hashbrowns
Tuesday - Cheesy Chicken Bundles**
Wednesday - CP Taco Soup**
Thursday - takeout Chinese (shopping and packing for retreat, too)
Friday - @ retreat - Mike will order in pizza, I know
Saturday - @ retreat, snacking - Mike & T will enjoy Party Enchiladas**
Sunday - No-peek Beef Stew (I use a can of campbells tomato soup inside, too )

Yummy Dinner .. Dirty Rice with Smoked Sausage



Here's what I made for our Fat Tuesday dinner. It was quite yummy, with a bit more of a kick than I usually eat but not spicy at all. My 11yo told me so. I used frozen peas and carrots instead of bell pepper 'cause that what I had.

Ingredients
* 2 cups long grain white rice
* 5 cups chicken stock, divided
* 2 tablespoons vegetable oil
* 1 pound smoked pork sausage, sliced
* 1 clove garlic, minced
* 1 large onion, chopped
* 1 stalk celery, chopped
* 1 medium green bell pepper, chopped
* 1/4 teaspoon cayenne
* 1/4 cup chopped fresh parsley leaves
* Kosher salt and freshly ground black pepper

Directions
Make the rice, in a medium saucepan combine the rice and 4 cups chicken stock. Bring to a boil, reduce the heat and simmer until all the stock is absorbed into the rice, about 20 minutes.

Meanwhile heat oil in a heavy-bottomed saute pan over medium-high heat. Brown the sausage. Once browned, add the garlic, onion, celery, and green bell pepper. Cook until softened, about 5 minutes. Season with salt and pepper. Add 1 cup chicken stock and cayenne. Cook until the stock has reduced a little. Add the cooked rice and parsley and stir thoroughly. Taste and season with salt and pepper, if necessary.

Menu Plan Monday - Week 5

I cannot believe that February is already here. AND, since it's the shortest month of the year, it's going to run by lickety quick -- probably as fast as January. Here's our plan so far:

Monday: something with leftover Pork Chops
Tuesday: Sweet and Sour Lentils (p 251 from $5 Dinners)
Wednesday: Teriyaki Chicken from Chill MAMAs
Thursday: Creamy Penne Pasta (modified from p58 from $5 Dinners)
Friday: Breakfast for Dinner
Saturday: Crockpot Three Packet Pot Roast from Stephanie O'Dea's, A Year of Slow Cooking
Sunday: (the BIG GAME) MOP Sausage Burgers, homemade chips, BLT salad (Rachael Ray)

Menu Plan Monday - Week 3


We are only into week three of the new year, but next week is SUPER BUSY for me. I have a commitment every night, Monday through Thursday. So, a menu is ESSENTIAL or we'd be wasting time, money, and calories doing the drive-thru boogie.

Monday (T's puppet ministry night) - Turkey Pot Pie using leftover turkey
Tuesday (Girl Scouts cookie meeting AND PTA) - Sloppy Joe Casserole with zucchini
Wednesday (Womens Retreat Planning) - Crockpot Sweet/Sour Meatballs over brown rice
Thursday (Girl Scout lock-in planning mtg) - Lasagna with green salad
Friday (at HOME!) - Homemade Pizza, half pepperoni/half Hawaiian
Saturday - Crockpot Asian Peanut Butter Pork Tenderloin
Sunday - simple supper Sunday

I'm thankful to have tomorrow off of work for MLK day, so will prep all the meals for Monday through Thursday night so I just have to take one from the refrigerator/freezer every night and bake or pop in the crockpot in the morning before work. The prep won't take me very long and will be such a HUGE help.

PPS - Has anyone ever planned refreshments for a retreat? We'll be going to a retreat center in early March that provides meals but I think snacks, etc. will be my responsibility. I'll know more on Wed night but would LOVE to hear your suggestions and experiences.

I'm planning on watching the iconic Groundhog Day movie at bedtime. It drives me crazy but I LOVE it!!
