Menu Plan Monday - end of October

I've been sketching out my menu for a couple of days. Mike's been off work for a little over a month so funds are getting T-I-G-H-T since his paid leave time has run out. So, thank goodness for a full pantry and supper swap meals in the freezer!!

I spent around $125 this weekend at my local cash-and-carry restaurant supply store and stocked up on a ton 0f basics -- 25# bag of onions, two huge bags of potatoes, mushrooms, leeks, broccoli crowns, avocados, 5 dozen eggs, 2 gallons of milk, sliced cheddar and swiss cheeses, huge tub of peanut butter, a 5# chub of lean ground beef, etc... just like Costco shopping but without all the temptations of Costco's other "good deals". My only non-food purchase was a stainless steel cookie dough scoop because I had a baking marathon this weekend and we broke my red Wilton scoop months ago. So, that really wasn't an "optional" purchase, right?

So, our money-conscious menu this week is:

Sunday: Rigatoni w/pepperoni and steak sauce, roasted purple cauliflower (all on hand)
Monday: Cinco Layer Bake w/sauteed mixed veggies (cauliflower, yellow squash, asparagus - yum) (freezer/pantry)
Tuesday: Teriyaki chicken, butternut squash (freezer/pantry)
Wednesday: Beef Stew (taking a crockpot full to work, too, for a belated "Soup-er" Boss celebration) (must buy stew meat)
Thursday: Burgers w/mushrooms and swiss, Pioneer Woman's Crash Potatoes (pantry)
Friday: Burrito night, broccoli (all on hand)
Saturday: leftover buffet
Sunday: Crockpot chili and cornbread - our traditional Halloween feast! (pantry)

Hi, I am looking at your meal plan and the only thing I am familiarized of is the Burrito. My BIL loves to make them. But me, not much to eat them but for Hubby's sake, I can do it. I'm new to this Meme and looking at people meals seemed to spark up my idea to cook for my family. I followed you here to day.
