I'm even more thankful when I have a plan for dinner so it doesn't take hours to get a meal on the table. This time of year, I rely so much on my crockpot and a freezer full of prepared meals from my supper swapping group, the Chill Mamas (short for Make Ahead Meal Artists!). The group started as a group of my students from the freezer/once a month cooking class I taught at church in the summer of '08; we've been preparing and sharing meals these past two years - mostly from my friend Kati's cookbook, Fix, Freeze, Feast, and then adding in our own favorites. (Kati's book was just re-released in softback - so cool!) While a couple of gals have switched out of the group, I think it's been a fun and successful venture and I'm looking forward to our third year.
Here's this week's menu plan:
Monday: Sticky Ribs and Creamy Taters/Turnips (Mike's creation - not bad)
Tuesday: Chicken/Broccoli Bake
Wednesday: Breakfast for Dinner
Veteran's Day - Thursday (girl scouts): Orange Teriyaki Chicken
Friday: Chicken and Dumplings
Saturday: leftover buffet
Sunday: Three Packet Pot Roast

In other happenings at the Halligans, Mike worked on Tess's truck most of the day Sunday. While it's not back to 100%, it's drivable and he'll finish it up this weekend. I spent the evening last night matching up partners in my newest Flirty Apron Swap so will start sending the emails after work tonight (in lieu of my much-needed shut eye). I also spent some time planning my tablescape and favors for the RHCC Women's Christmas Dessert - I'll be hosting a table on Saturday the 4th.
PS - What do you think of my new blog look?? I won a blog makeover from Creative Creations by Cristin, and I think she did a great job!!

Yawn! I am like you...get up in the dark, go to work in the dark, come home in the dark and I can't get focused this week! Love the pics and enjoy your apron swap!
